Stuffed Bell Peppers

So I finally made myself make the bell peppers, and it really wasn't as difficult as I was dreading but it did take a long time to cook.  I started by putting the brown rice in the rice cooker (since that takes about 35 minutes).  Then I chopped up and hollowed out the bell peppers.  And sauteed the bell pepper pieces (again skipping the onions since I am allergic).  After I sauteed those I realized that I bought the wrong kind of sausage.  A novice mistake.  So I cut the sausage into bite size pieces, a bit tedious but oh well.  And I threw the sausage in with the bell peppers.
I seasoned the mixture as instructed and then I added the rice...I did have to wait awhile for it to be done.  I had preheated the oven to 375 so I added the cheese and then stuffed the bell peppers.  I didn't have a square pan as the recipe suggested so I put the bell peppers in bread pans, two in each.
Then the peppers cooked for 30 minutes and then you pull them out and add mozzarella cheese on top and put them back in for 10 minutes...I did like minutes because I was starving and My Love didn't want the cheese topper so he had already started eating.
Then I served myself took a bite and realized...I don't like this.  Right when I added the Parmesan cheese it created this smell that was not too pleasurable.  And I really hoped that would go away or die down but it didn't and I couldn't really get past it.  My Love however, thought they were great!  He took the leftovers to work for lunch today and said they are even better now that the flavors have set in.  So, if you think you will like this I would still suggest the recipe...it just wasn't for me.

  1. Yeah I'm not a fan of stuffed peppers either. Glad your hubby liked them though so they didn't go to waste.
