Baked Donut Muffins

Well...I didn't get to cook the pasta last night because I completely forgot when I wrote that that I was starting school last night.  So, in the mere hour I had between work and class I decided to heat up some soup instead.  BUT...I held out on you yesterday...
Not only did I make the bell peppers but I also made these yummy treats...
They were so easy!!! An answer to a craving for sugar, because it is one of those miracle recipes that you always seem to have all of the ingredients already stocked in the pantry.  The only thing I didn't have was a mini muffin pan, so I made do with a brownie pan I got as a wedding present.  Thanks Schweppes!!!
So the recipe consists of sugar, butter, milk, flour, baking powder, nutmeg and cinnamon.
Simply mix the batter, bake.  Dip in melted butter and roll in sugar/cinnamon mixture.  And let cool (My husband likes to eat everything while it is still cooking, and in my opinion they were much better cooled than hot).

Ingredients:
1/2 cup white sugar
1/4 cup unsalted butter
3/4 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup all-purpose flour

Topping:
1/4 cup unsalted butter
1/2 white sugar
1 teaspoon ground cinnamon

Directions:
Preheat oven to 375 degrees. Butter 24 mini muffin tins. Mix ½ cup sugar, ¼ cup butter, and nutmeg in a large bowl. Stir in milk, then mix in baking powder and flour until just combined. Fill the prepared mini muffin cups about half full. Bake until the tops are lightly golden, 15 to 20 minutes. While muffins are baking, place ¼ cup of melted butter in a bowl. In a separate bowl, mix together ½ cup of sugar with the cinnamon. Remove baked muffins from their cups, dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture. Let cool and serve.
